Week #3 of 2012 Challenge
- MAKE your own dinner and include at least one vegetable
Yes, this is a tougher challenge due to time restrictions that people have with work, childcare, etc. However, research continually highlights that people and families that make their own dinner and eat together are healthier and have better relationships (especially kids when they reach their teen-age years - added perk!!). Try not to see this as an extra burden, but instead as an investment in your and your family. A great strategy that Matt and I started to recently is cooking ahead or freezing food (that can be easily thawed when making for dinner). Both us our schedules are insanely busy and we still manage to sit down and have dinner together most nights of the week, even if it is just a lunchmeat sandwich and broccoli/salad! Healthy crockpot recipes are also an amazing invention!! Put it in when you leave for work and return to a great meal for dinner.
